Here’s a simple and delicious recipe for Soya Pulao:
Ingredients:
2 cup rice (washed and soaked for 20 minutes)
1 cup soya chunks (soaked in hot water for 10 minutes and squeezed)
1/2 cup yogurt
2 tablespoons oil or ghee
1 medium onion, chopped
1 medium tomato, chopped
1 green chili, slit (optional)
1 tablespoon ginger-garlic paste
1/4 cup green peas (fresh or frozen) (optional)
1/4 cup chopped vegetables (carrot, beans, optional)
1/2 teaspoon cumin seeds
1 bay leaf
2 cloves
2 dry red chilli
2-3 black pepper
1 small cinnamon stick
1-2 green cardamoms
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala or biryani masala
1 teaspoon coriander powder
Salt to taste
4 cups water or as needed
2 tablespoon Mint leaves
Fresh coriander leaves for garnish
Instructions:
Prepare the Soya Chunks:
Soak the soya chunks in hot water for 10 minutes. Squeeze out excess water and set aside.
In a bowl, mix the soya chunks with yogurt, red chili powder, turmeric, coriander powder and salt. Let it marinate for at least 30 minutes.
Cook the Spices:
Heat oil or ghee in a pressure cooker or heavy-bottomed pot.
Add cumin seeds, bay leaf, cloves, dry red chilli, black pepper, cinnamon, and cardamom. Sauté until fragrant.
Sauté the Onions and Vegetables:
Add the sliced onions and sauté until golden brown.
Stir in the ginger-garlic paste and green chili, and cook for a minute.
Add the chopped tomatoes and cook until soft.
Add the Spices and Vegetables:
Add the prepared soya chunks. Sauté for 2-3 minutes.
Add the Rice and Water:
Drain the soaked rice and add it to the pot. Stir gently to coat the rice with the masala.
Add coriander leaves and mint leaves.
Pour in water and add garam masala, salt. Mix well.
Cook the Pulao:
If using a pressure cooker: Close the lid and cook for 1 whistle on medium heat, then turn off the heat. Let the pressure release naturally.
If using a pot: Cover and cook on low heat until the rice is tender and the water is absorbed.

Serve:
Fluff the pulao gently with a fork and garnish with chopped coriander leaves.
