Here's a recipe for Sabudana Wada, a popular Indian snack made with tapioca pearls (sabudana):
Ingredients:
1 cup sabudana (tapioca pearls)
3-4 medium-sized potatoes, boiled and mashed
1/2 cup roasted peanuts, coarsely ground
2-3 green chilies, finely chopped
1 teaspoon cumin seeds
1 teaspoon grated ginger
1 tablespoon lemon juice
2 tablespoons fresh coriander leaves, finely chopped
Salt to taste
Oil for deep frying
Instructions:
Soak Sabudana: Rinse the sabudana under running water until the water runs clear. Soak it in water for about 5-6 hours or overnight. Drain any excess water and let it sit in a colander to remove extra moisture.
Prepare the Mixture: In a large bowl, combine the soaked sabudana, mashed potatoes, ground peanuts, green chilies, cumin seeds, grated ginger, lemon juice, coriander leaves, and salt. Mix well until all the ingredients are evenly combined.
Shape the Wadas: Take small portions of the mixture and shape them into flat, round patties or wadas. Ensure they are of uniform size for even cooking.
Heat Oil: In a deep frying pan, heat oil over medium heat. To check if the oil is ready, drop a small piece of the mixture into the oil. If it sizzles and rises to the surface, the oil is hot enough.
Fry the Wadas: Carefully slide the wadas into the hot oil, a few at a time, without overcrowding the pan. Fry them until they turn golden brown and crispy on both sides. Remove them using a slotted spoon and place them on a paper towel to drain excess oil.
