Simple recipe for Aloo Beans Sabji

  Here’s a simple and flavorful recipe for Aloo Beans Sabji (Potato and Green Beans Stir Fry):

Ingredients:

Potatoes (Aloo): 2 medium, peeled and diced

Green beans: 250 grams, trimmed and cut into 1-inch pieces

Oil: 2 tablespoons

Cumin seeds (Jeera): 1 teaspoon

1 small onion, finely chopped

Asafoetida (Hing): a pinch

Turmeric powder (Haldi): 1/2 teaspoon

Red chili powder: 1/2 teaspoon (adjust to taste)

Garam masala: 1/2 teaspoon

1/2 cup grated coconut

Salt to taste

2-3 tbsp coriander leaves

Curry leaves: 7-8

Ginger: 1 teaspoon

Garlic: 5-6 cloves

Instructions:

Preparation:

Wash and prepare the vegetables. Dice the potatoes into small cubes for faster cooking.

Trim and cut the green beans into equal-sized pieces.

Prepare Green masala:

Add Grated coconut, curry leaves, ginger, garlic and Fresh coriander leaves into a mixer grinder jar and grind it nicely. Set aside. 

Tempering:

Heat oil in a pan or kadhai on medium heat.

Add cumin seeds and let them splutter.

Add onion, finely chopped. 

Add a pinch of asafoetida for added flavor.

Cooking the Vegetables:

Add diced potatoes and stir well to coat them with oil.

Sprinkle turmeric powder and salt to taste. 

Add green masala and stir well. 

Add green beans to the pan. cook for 2-3 minutes. 

Add garam masala and red chili powder. Mix thoroughly.

Cover the pan and let the vegetables cook on low-medium heat. Stir occasionally to prevent sticking. If needed, sprinkle a little water to avoid burning.

Final Seasoning:

Once the potatoes and beans are cooked through, add dry mango powder (if using). Mix well and cook for another 2-3 minutes.

Serve:

Remove from heat and serve hot with chapati, paratha, or as a side dish with rice and dal.
