Simple recipe for Poha Cutlet

Poha cutlets are delicious, crispy snacks made with flattened rice (poha), vegetables, and spices, ideal for breakfast or tea time.

Ingredients:

1 cup poha (flattened rice)

2 medium potatoes, boiled and mashed

1 small onion, finely chopped

1-2 green chilies, finely chopped (adjust to taste)

1/4 cup grated beetroot (optional)

1/4 cup finely chopped bell pepper (optional)

2-3 tbsp chopped coriander leaves

1/2 tsp garam masala powder

1/2 tsp chaat masala or amchur (dry mango powder)

Salt, to taste

1/4 cup bread crumbs (for binding, adjust as needed)

Oil for shallow frying

Instructions:

Prepare Poha: Rinse the poha under water for a few seconds and let it soak until soft (about 3-5 minutes), then drain thoroughly and set aside.

Combine Ingredients: In a large mixing bowl, add the softened poha, mashed potatoes, onions, green chilies, bell peppers, coriander leaves, beetroot, garam masala, chaat masala, and salt. Mix well.

Add Bread Crumbs: Gradually add bread crumbs to the mixture to absorb excess moisture, making it easier to shape into cutlets.

Shape the Cutlets: Take a small portion of the mixture, press and shape it into round or oval cutlets. Repeat for the remaining mixture.

Shallow Fry: Heat oil in a pan on medium heat. Place the cutlets in the pan and cook for 3-4 minutes on each side or until golden brown and crisp.

Serve: Drain the cutlets on paper towels and serve hot with green chutney or ketchup.

Tips:

Adjust spice levels to taste.

Add any vegetables you prefer, like corn or grated beetroot.

For extra crispiness, coat cutlets in additional bread crumbs before frying.
