Simple recipe for Sabudana Khichdi with Potato

Here's a simple and delicious recipe for Sabudana Khichdi with Potato:

Ingredients:

1 cup sabudana (tapioca pearls)

2 medium, peeled and diced Potatoes (Aloo)

2 tablespoons ghee (clarified butter) or oil

3-4 green chilies, finely chopped

1/4 cup roasted peanuts, coarsely ground

Salt to taste

Instructions:

Soak the Sabudana:

Rinse the sabudana under running water until the water runs clear. Soak them in enough water to cover them by about an inch. Let them soak for 4-6 hours or overnight. The pearls should become soft and separate easily when pressed between your fingers.

Prep Work:

Drain the soaked sabudana completely and set aside.

Heat ghee or oil in a pan over medium heat. 

Add salt to taste

Add the chopped green chilies and sauté for a few seconds.

Add diced Potatoes.

Combine Ingredients:

Add ground peanuts and sauté for a few seconds.

Add the drained sabudana to the pan. Mix well to combine.

Cook the mixture on low to medium heat, stirring gently to ensure the sabudana doesn't stick together or to the pan. 

Add ghee and cook until the pearls turn translucent, which usually takes about 5-7 minutes.

Finish and Serve:

Squeeze the lemon juice over the khichdi and mix well.

Serve hot.
