Ingredients:

For the Filling:

1 cup broccoli, finely chopped or grated

100 grams paneer, crumbled

1 small onion, finely chopped

1 small tomato, finely chopped

1 small capsicum (bell pepper), finely chopped

1-2 green chilies, finely chopped (optional)

1/2 tsp chaat masala (optional)

1 tbsp oil or butter

Salt and pepper to taste

Spices (optional): chaat masala, chilli flakes, or oregano

3-4 tablespoon coriander leaves (optional)

For Assembly:

4 rotis or whole wheat tortillas

2 tbsp green chutney or tomato ketchup (optional)

1 tbsp butter or ghee (for toasting)

Instructions:

Prepare Broccoli: Cut the broccoli head into florets. Rinse under cold water.
Cook Broccoli: Fill a large pot with water and bring it to a boil. 
Once the water is boiling, carefully add the broccoli florets. Boil for 3-4 minutes, or until the broccoli is tender but still bright green.

Prepare the Filling:

Chopped vegetables. 

Assemble the Sandwich:

Take a roti and spread a thin layer of green chutney or tomato ketchup.

Add a layer of the vegetables on roti, followed by tomato and onion slices.

Fold the roti into a semi-circle or roll it up tightly.

Heat a pan or griddle and grease it with butter or ghee.

Place the folded roti on the pan and toast both sides until golden and slightly crisp.
