Here's a simple recipe for White Beans|Navy Beans Usal, a flavorful Maharashtrian-style dish made with white beans|Navy beans and spiced with traditional Indian flavors.

Ingredients:

2 cup white beans (soaked overnight or canned)

2 onion (finely chopped)

2 tomato (finely chopped)

4-5 garlic cloves (crushed or minced)

1-inch ginger (grated) (optional) 

2-3 green chilies (slit or chopped)

1/2 tsp mustard seeds

1/2 tsp cumin seeds

1/4 tsp turmeric powder

1 tsp red chili powder

1 tsp goda masala (or garam masala, if unavailable)

1 tsp coriander powder (optional) 

1/4 tsp asafoetida (hing)

2 tsp oil

Salt to taste

1 tbsp jaggery (or sugar, optional)

1 cup water

7-8 curry leaves

Fresh coriander leaves (chopped for garnish)

Lemon juice (optional, for serving)

Instructions:

Prepare the beans:

If using dry white beans, soak them overnight and pressure cook for 3-4 whistles until tender. If using canned beans, rinse and drain them thoroughly.

Tempering (Tadka):

Heat oil in a pan. Add mustard seeds and let them splutter. Add cumin seeds, asafoetida, and green chilies.

Sauté the base:

Add chopped onions, garlic, and ginger. Sauté until the onions turn golden brown. Then add tomatoes and cook until soft and mushy.

Add spices:

Stir in turmeric, red chili powder, coriander powder, and goda masala (or garam masala). Mix well and cook for 1-2 minutes until the masala releases oil.

Cook the beans:

Add the cooked white beans to the pan. Mix everything well. Add salt, jaggery, and about 1/2 cup of water to achieve the desired consistency.

Simmer:

Let the usal simmer on low heat for 5-7 minutes so the flavors combine. Adjust water or spices as needed.

Garnish and serve:

Garnish with fresh coriander leaves and a squeeze of lemon juice (optional). Serve hot with rice, roti, or bread.

Tips:

For an authentic taste, goda masala is key. If unavailable, replace it with garam masala and a pinch of roasted coconut powder.

Adjust spice levels to suit your preference.
