Bhogichi Bhaji is a traditional Maharashtrian dish prepared during the festival of Bhogi, which is celebrated a day before Makar Sankranti. This mixed vegetable curry is rich, nutritious, and made with seasonal vegetables and flavors.

Ingredients:
Vegetables:
Carrots: 1 medium, chopped
Brinjals (small): 2-3, chopped
Green peas: ½ cup
Indian flat beans (Val papdi): ½ cup, chopped
Valor beans (Indian Broad Beans): ½ cupFresh chickpeas: ½ cup
Lima beans (Pavta): ½ cup
Potato: 1 medium, chopped
Sweet potato: 1 medium, chopped (optional)
Raw peanuts: ¼ cup (boiled or soaked)
Apple Ber: 2-3, chopped
Sesame seeds: 1 tablespoon (lightly roasted)
Grated fresh coconut: ½ cup
For the Tempering:
Oil: 2 tablespoons
Mustard seeds: 1 teaspoon
Cumin seeds: 1 teaspoon
Asafoetida (Hing): A pinch
Curry leaves: 6-8
Garlic: 4-5 cloves, crushed
Green chilies: 2-3, slit
Spices:
Turmeric powder: ½ teaspoon
Red chili powder: 1 teaspoon
Goda masala (or garam masala): 1 tablespoon
Jaggery: 1-2 teaspoons (optional)
Tamarind pulp: 1 tablespoon (optional)
Salt: To taste
Instructions:
Prepare the Vegetables:
Wash and chop all the vegetables into bite-sized pieces.
Boil the hard vegetables like sweet potato, potato, and peanuts until partially cooked.
Make the Coconut-Sesame Paste:
Grind grated coconut and roasted sesame seeds into a coarse paste. Set aside.
Heat Oil and Temper:
In a large pan, heat oil. Add mustard seeds and let them splutter.
Add cumin seeds, asafoetida, curry leaves, crushed garlic, and slit green chilies. Sauté for a few seconds.
Add Vegetables:
Add all the vegetables and mix well. Sauté for 2-3 minutes.
Spice it Up:
Add turmeric powder, red chili powder, and goda masala. Mix everything well.
Cook the Vegetables:
Add a little water (around 1 cup), cover, and let the vegetables cook until tender.
Add Coconut Paste and Flavorings:
Stir in the coconut-sesame paste, jaggery, tamarind pulp, and salt. Adjust the consistency with water if needed.
Simmer for another 5-7 minutes to let the flavors blend.
Garnish and Serve:
Garnish with freshly grated coconut and chopped coriander leaves.
Serve hot with bhakri, chapati, or steamed rice.
